Experience
Formally trained in French Cuisine with four (4) years for progressive experience as a Chef de Partier who can demonstrate capability to advance to Sous Chef, or an experienced Sous Chef.

Main Role and Responsibilities
The Sous Chef oversees kitchen activities, including ordering ingredients for Le Cordon Bleu Ottawa's
Production Kitchen
and
Signatures Restaurant
. This role ensures quality control and the efficient operation of both kitchens.
Key Responsibilities
(include but are not limited to, and may evolve over time):
Responsible for food orders for Le Cordon Bleu Ottawa Culinary Arts Institute and Signatures Restaurant. Responsible for food sourcing and cost control.
Coordinate schedules for school and restaurant activities.
Prepare mise en place for the menu, under the supervision of the Head Chef at Signatures Restaurant (currently open Friday/Saturday for fixed menu, and occasionally during the week for special events).
Adhere to and be familiar with manuals, personnel management policies, company rules, and memos distributed to students.
Collaborate with all school and restaurant personnel involved in food ordering.
Assist with food reception and quality inspection.
Maintain work standards by properly segregating food items between the school and the restaurant.
Ensure accuracy in portion sizing and support accurate menu costing.
Ensure cleanliness of the Production Kitchen and Restaurant by implementing follow-up procedures and standard checklists.
Conduct regular ingredient inventory counts.
Manage finished and unfinished products efficiently to minimize waste.
Oversee student scheduling in the Production Kitchen.
Maintain constant communication with department heads to keep them informed of outstanding tasks.
Follow directives given by management.
Perform any other duties assigned by management.

Qualifications
Diploma in French Cuisine.
Strong verbal and written communication skills in English; French is an asset.
Excellent interpersonal and presentation skills.
Proficiency in Microsoft Office programs (Office 365, Excel, Word, PowerPoint, and SharePoint).

Salary Range: $58,000 to $62,000 per year based on experience
