The

Sous Chef

supports high-energy, multiple fast-paced kitchen environment, ensuring the delivery of exceptional hospitality and food quality. In the absence of the Executive Chef, the Sous Chef oversees kitchen operations, manages food preparation and inventory, and contributes to menu planning. This role also assists with Pack Member scheduling, training, and team relations.

Essential Duties & Responsibilities




Team

Willingness to accept the most effective role. Plan and update menus based on trends, guest preferences, and available ingredients. Maintain food quality by upholding preparation, presentation, and portion standards. Supervise kitchen operations, including scheduling, task delegation, and food preparation oversight. Enforce health and safety regulations, ensuring compliance with sanitation standards and food safety requirements. Adheres to all requirements of the Lodges Food Safety Program. Support Pack Member relations through recruitment, training, coaching, and clear communication. Implement process improvements to boost kitchen efficiency and service quality. Provide support across all resort Food & Beverage outlets, including events and quick-service areas. Close with an open mentality. Keep all areas in like-new condition and website ready.

Guest

Ensure guests are greeted and acknowledged consistently, adhering to the 10/5 Rule. Identify current and future guest food preferences by building rapport and understanding dietary needs. Promote excellence by delivering superior service and creating meals that accommodate dietary restrictions and allergen concerns. Establish and uphold department standards with a strong focus on exceptional guest service. Handles and assists all guest dietary restrictions and allergen accommodations with the outmost care and attention. Communicate with guests in a professional and friendly manner.

Financial

Protecting company assets by adhering to policies and procedures. Price menu items by analyzing recipes and calculating food, labor, and overhead costs. Manage purchasing by sourcing suppliers, negotiating pricing, estimating consumption, and placing and expediting orders. Track and document all cost allocations to the Executive Chef to maintain budgeted COS. Follows all labour requirements and adjusts as required to maintain labour budget.

Qualifications & Traits



Hold a Red Seal Designation and a valid Food Handlers Safety Certificate. Bring a minimum of 5 years of experience in a high volume tourism-focused Sous Chef role (preferred). Deliver exceptional guest service with a strong understanding of dietary restrictions and allergen accommodations. Strong leadership skills with experience in manageing large multi-unit Culinary operation. Demonstrate excellent multitasking and prioritization skills in a fast-paced setting. Develop, implement, and monitor programs to ensure a safe and compliant work environment aligned with all relevant regulations. Attention to detail in all aspects of Culinary operations. Maintain a thorough understanding of sanitation practices and food safety standards. Build strong working relationships and positive rapport with Pack Members.

Additional Requirements




Newly hired Pack Members must submit a completed police clearance to Human Resources. Employment may begin before the results are received, based on the Pack Member's confirmation that they have no unpardoned criminal convictions. If the clearance reveals a conviction, the employer may terminate employment on a case-by-case basis, providing only the minimum notice required under the Employment Standards Act, 2000, with no additional notice or compensation.
