About the Position:

The

Sous Chef

is responsible to oversee the kitchen operation including: the Charbar Restaurant, Alley Burger take-out window, Rooftop Bar @ Simmons patio, Connie & John's Pizza and participation in the management of the event kitchen when required.

Sous Chef

are responsible for supervising and participating in production along with the kitchen team by monitoring all food preparation and presentation over the course of the day. You will also be required to control the pass as required during service times.

Job description



Assist the Executive Chef in the supervision of all food and beverage operations to be in line with the Company's Standards.

Will work with the Executive Chef to update working schedules for all Cooks and Dishwashers, monitor attendance and flex staffing according to business levels to maintain set out labour costs.

Ensure the Recipe's and production lists are followed and executed to our standards.

Conduct food inventory and monitor food waste. Implement practices that will help us achieve our food cost goals on a month-to-month basis.

Be present during unloading, controlling quality of fresh fish and fresh produce and meats.

Must have full comprehension of the established quality standards and Company Policies to supervise his or her subordinates.

Will give proper training to the new crewmembers and follow up on their progress.

Communicates daily with the reports. Goals are to fully communicate happenings of that day so the other team members are fully aware of any outstanding issues or other related subjects that should be included.

Control and provide daily food orders and production lists for the next day preparation according to the Executive Chef direction.

Must have comprehensive knowledge of and certified in Alberta Heath Services Food Safety. Ensure that they are followed throughout the entire operation daily.

Ensure that the kitchen-cleaning schedule is followed by everyone, after each service and exercising proper methods to prevent equipment damage.

Responsible for the control and maintenance of all equipment within the kitchen areas and report any damages or malfunctions doing the necessary follow up.

Ensures that all Cooks are in proper, well-maintained uniforms, with special attention to those working in public areas. Personal appearance and hygiene must be according to Company policy.

Oversee the preparation, presentation and are required to be physically present during services.

Responsible for the set up of the Food Line for the Restaurant, Alley Burger and Rooftop Patio Bar, ensuring that quality and quantity standards are met. Be instrumental in organizing an efficient flow of production. Check all daily events, delegate, and follow up.

Constantly thrive to upgrade the food quality and presentation and establish the necessary controls that would ensure a high level of quality and consistency.

Must ensure the HACCP program is carried out correctly and all related logbooks are filled out and signed off on. Enforce "clean as you go" culture.

Must have a thorough understanding of how our schedule operates, be familiar with required paperwork for new hires and all other supporting documentation.

Attend all schedule meetings or workplace activities on time. Be prepared to share and add value to all discussions and be a contributing member to management during these meetings.

PHYSICAL REQUIREMENTS:



Requires moderate physical activity, handling of average-weight objects, up to 50 pounds, and standing and/or walking for more than (8) hours per day.

Work involves moderate exposure to extreme temperatures, smoke, odors, and/or loud noises.

Work environment involves some exposure to hazards or physical risks, which require following basic safety precautions.

Job Types: Full-time, Permanent

Pay: $21.00-$22.00 per hour
