Co-ordinate special events Determine the size of food portions and costs Plan menus and estimate food requirements for their realization Requisition food and kitchen supplies Prepare and cook complete meals or individual dishes and foods Prepare and cook special meals for patients as instructed by dietitian or chef Inspect kitchens and food service areas Train staff in preparation, cooking and handling of food Order supplies and equipment Supervise kitchen staff and helpers Maintain inventory and records of food, supplies and equipment Clean kitchen and work areas Organize buffets and banquets Manage kitchen operations Address customers' complaints or concerns Train staff in job duties, sanitation and safety procedures Supervise and co-ordinate activities of staff who prepare and portion food Supervise and check assembly of trays Supervise and check delivery of food trolleys Prepare food order summaries for chef Prepare and submit reports Prepare budget and cost estimates Maintain records of stock, repairs, sales and wastage Establish methods to meet work schedules Establish work schedules Estimate ingredient and supplies required for meal preparation Ensure that food and service meet quality control standards Hire food service staff Must have knowledge of the establishment's culinary genres
