Position Summary
The Cold Side Production Cook is responsible for preparing, portioning, and assembling all cold menu items such as salads, sandwiches, dressings, cold appetizers, and desserts according to company recipes and standards. This position ensures high-quality, consistent food production while maintaining proper food safety, sanitation, and organization in the cold prep area.
Job Structure
This is a full-time hourly wage position. Work schedule includes weekends and holidays as required. Paid vacation accrual at 4%. Health insurance plan is included after 6 months of full-time employment and life insurance benefits are available.
Responsibilities
Prepare and assemble all cold food items (e.g., salads, wraps, sandwiches, sauces, dressings) following standardized recipes and portion guidelines.
Maintain accurate labeling, dating, and rotation of products (FIFO method).
Set up and stock cold station with all necessary supplies and ingredients for production.
Ensure food is stored and handled at safe temperatures according to health department and company standards.
Maintain cleanliness and organization of the cold prep area, refrigeration units, and prep tables.
Assist in daily prep lists and production schedules as directed by the chef or supervisor.
Communicate inventory and product needs to kitchen management to avoid shortages or waste.
Adhere to all food safety, hygiene, and sanitation guidelines.
Work collaboratively with hot line cooks, prep cooks, and other team members to ensure timely service and consistent product quality.
Perform additional tasks and support kitchen operations as needed.
Qualifications
1-2 years of experience in a commercial kitchen or cold prep/production role preferred.
Knowledge of basic culinary techniques and cold food preparation.
Understanding of food safety and sanitation standards.
Ability to stand for long periods and lift up to 40 lbs.
Strong attention to detail, time management, and organizational skills.
Team-oriented with good communication and a positive attitude.

Pay: $18.50-$19.00 per hour
