Position Overview

Reporting to the General Manager, the Kitchen Manager will own the overall business operations of Fresh within the broader shared building. The Kitchen Manager will work closely with the Assistant Kitchen Manager to ensure the back of house operations are aligned with company policies and procedures. The Kitchen Manager leads by example by working on the line, expediting and taking a hands-on approach to daily location activity. It is expected that this individual brings a significant amount of business acumen to balance all operating costs including labour, food waste, discounts as well as leadership and interpersonal skills that achieve and maintain safe environments for employees and guests. They must understand the operations in its entirety to monitor and motivate the leadership team and their staff.

The Kitchen Manager is vital in optimizing company profit by creating the best possible guest experience while inspiring and maintaining high team morale. They are responsible for team building from coaching for growth and success, to staff development with their ultimate goal of creating future managers. The ideal manager would be a resourceful, process-oriented problem solver, who can communicate clearly while working in a fast-paced environment with great attention to detail and organizational skills.

Requirements
  • 4+ years of experience in people, kitchen and/or restaurant management
  • 2+ years of experience in a high volume kitchen
  • Technology savvy, we use it everywhere
  • High financial acumen and understanding inventory and cost controls
  • Strong interpersonal skills and understanding of diversity & inclusion
  • Proficient leadership / cross-functional relationship building skills
  • Excellent communications, presentation and organizational skills both verbal and written
  • Working towards or completion of education focused in Culinary Arts, Hospitality, Business or related field (bonus)
Summary of Responsibilities

Employee Management
  • Leads the full hiring cycle and promotion process for all BOH staff
  • Manages reports by issuing Performance Improvement Plans and performing onboarding and offboarding tasks
  • Plans and completes performance reviews in a timely manner following Fresh guidelines and provides constructive feedback
  • Improves employee retention by coaching and committing to the growth and development of staff
  • Contributes to a safe and welcoming environment by respecting and accepting all individuals who enter the restaurant
  • Emphasizes the safety, sanitation and security awareness when overseeing the training of staff especially when operating equipment
  • Trains leaders on ordering, inventory, maintenance practices and people management
  • Holds staff accountable to all procedures and standards set out by Fresh
  • Actively participates in manager meetings while encouraging, including and actively listening to the opinions of others
  • Completes all assigned management training sessions such as diversity & inclusion, and skill-building workshops
  • Fosters an environment with low turnover, high morale and an engaged employee base
Operations Management
  • Maintains an inspection ready restaurant including kitchen and storage areas at all times
  • Upholds all of Fresh's standards and policies including attendance, code of conduct and uniform policy
  • Meets labour cost objectives when creating and publishing weekly schedules
  • Runs the line or expedites during peak times and as necessary to ensure 100% guest satisfaction
  • Uses inventory software to accurately enter stock levels and invoices, addressing variances as needed
  • Optimizes profit and minimizes waste when ordering food and supplies to maintain the appropriate inventory by forecasting accurately
  • Controls food cost and usage by following proper prep, portioning and waste control procedures
  • Follows preventative maintenance schedules on equipment and acts proactively to decrease risks to employees, guests and company assets
  • Coordinates with the front of house department on guest complaints and escalations regarding allergies and food quality
  • Maintains all logs, systems and procedures within the kitchen such as prep lists and training completions
  • Manages all invoicing and works collaboratively with Regional Directors and home office staff to ensure accuracy
  • Achieves operations within budget sets and reviews budgets with Senior Management
