Summary:



This role is an integral role in our manufacturing business. It is one of the more skilled roles in our business, and requires a great deal of attention to detail. The Kitchen team must work together to optimize the output, while managing risk to personal Safety and Food Safety and Quality.

The Kitchen/Cook team will coordinate with the shift team leader, constantly coordinating the progress and planning of materials from Veg/Batching through to the Kitchen for processing.

*The Kitchen / Cook team will provide backup support for the Batching, Boxing and Veg Processing rooms

Responsibilities / Duties:



Careful and safe handling of raw materials Adherance to all GMP's, with regular training to improve knowledge and understanding Follow HACCP guidelines, and company policies and procedures to meet our food safety & quality standards Check lot codes, dates and batching labels on ingredients prior to use Ensure the correct rotation of raw materials on a first in first out basis Strict adherance to the processes for Tomato Totes, wrapping prior to taking into the kitchen Setup of work station with all ingredients and utensils required, gathering batched ingredients from coolers and warehouse required for the recipe Follow the daily production schedule to meet production output, communicating effectively with the Shift Leader, and team leader to coordinate the flow of materials from Veg/Batching ready for processing Read and follow recipes, and each step of the processing SOP, recording 'Actual' outputs at each step of the recipe Operation of the Kettles, controlling temperature, water flow, tomato press, and diced tomatoes through 'Jim' from the HMI screen, within the specified process Accurate completion of documentation, including CCP's and changeover - checking the changeover matrix regular before starting the next product Carry out online testing for CCP / ph / Bostwick according to the product specification, any KPQMS deviations to be flagged to the Shift Leader Record and monitor the weights of the kettle, in coordination with each ingredient addition, validating the accuracy of the product manufcaturing stage Dispense some bulk items in totes directly in the kitchen, using the procedure for 'Jim' Handle utensils for testing, weighing/dispensing of ingredients, including careful use of knives, and some powered equipment as needed.Special attention to the emulsifiers, PD pumps and Graco Pump Ability to safely assemble and disassemble the above equipment Maintain the tools/equipment inventory to ensure nothing is missing from the Kitchen Communicate, and coordinate the flow of product into the SP room, ensuring they always have visibility of what is next Careful changeover of recipes, sometimes resulting in a full clean of the area due to Allergen control, and minimize the risk of cross-contamination Clean and sanitize the work area, including all equipment and utensils used - as per the SOP Safe handling of chemicals required for the cleaning process Operate the Buggy Washer, and cleaning as required at the end of each shift as a minimum; more frequently dependent on the product mix for the day - Shift leader will give direction Follow our safety standards, using the correct PPE (personal protective equipment) as needed at all times Give a full handover to the next shift/team, in order for them to effectively carry on with the schedule During a night shift, there will be a 'deep' clean of the Kitchen room, as per a full clean and sanitation for changeovers

Safety conscious, with good awareness of surroundings, and safety of others Good communication Punctual, pleasant and reliable Actively contribute to the companys culture and values Ability to follow written directions, company policy & procedures Works well as a team Careful operation of tools required for the task Attention to detail, looking for sub-standard materials and raising concerns Comfortable to be trained on manual, and powered pallet trucks for moving skids at floor level Ability to follow written directions and manufacturing best practices; unique to the food industry Able to walk, stand and bend while handling ingredients Ability to operate HMI screen to control equipment Perform online quality tests (e.g. ph testing)

Qualification Requirements:



Proficient in spoken and written English Experience in food manufacturing preferred, but not essential Works in a methodical manner Attention to detail is crucial
