Position Summary



The Prep Cook is responsible for daily mise-en-place, ingredient preparation, and maintaining kitchen organization to ensure smooth and efficient service. This role supports the culinary team by executing prep lists, following recipes and standards precisely, and upholding the restaurant's commitment to quality, consistency, and food safety.

Key Responsibilities



Food Preparation

Execute daily prep lists accurately and efficiently. Wash, peel, cut, and portion vegetables, fruits, proteins, and other ingredients. Prepare stocks, sauces, marinades, dressings, and basic components according to chef specifications. Label, date, and rotate all items following FIFO and food-safety protocols. Assist chefs during service by replenishing stations and delivering components as needed.

Kitchen Operations

Maintain a clean, organized, and sanitized workspace at all times. Follow knife-handling, equipment-use, and safety procedures. Adhere to all food-handling and storage standards (HACCP, local health regulations). Communicate low-stock items, quality concerns, or equipment issues promptly to the Sous Chef. Support dishwashing duties or station setup when required.

Quality & Consistency

Follow recipes, measurements, and preparation methods with precision. Ensure all prepped items meet the restaurant's quality standards for taste, texture, freshness, and presentation. Assist with receiving deliveries, checking quality, and storing products correctly.

Qualifications

Previous kitchen experience preferred; fine-dining or steakhouse experience an asset. Strong knife skills and understanding of basic cooking techniques. Ability to work efficiently in a fast-paced, high-volume environment. Good communication skills and ability to follow directions accurately. Ability to stand for long periods and lift up to 40 lbs. Positive attitude, reliability, and teamwork mindset.

Work Environment

Fast-paced, collaborative kitchen environment. Requires evening, weekend, and holiday availability. Exposure to heat, cold, sharp tools, and commercial kitchen equipment.
