This position reporting into the Food & Beverage Leader, is responsible in conjunction with the Food & Beverage Leader for long- and short-term planning and day-to-day operations of the resort's food & beverage operations. Develops and recommends the budget, marketing plans and objectives and manages within those approved plans. Plan and manage the Human Resources and operations of the culinary division to achieve guest satisfaction and quality service while meeting/exceeding financial goals. Additional responsibilities include the planning and coordination of special events, promoting food and beverage products, setting and maintaining culinary standards, achieving sales goals, protecting culinary assets through utilization of security/safety procedures including accurate inventory controls. Participate in the overall resort management as a member of the Resort's Management

Team.

WHAT YOU WILL BE DOING

Operations

- Oversee the daily operations of the department

- Measure and report on daily operations and quantity and quality of service

- Work closely with the Front of House Manager to source and acquire food and beverage supplies

- Initiate leadership with Vetta promotions and programs

- Source out local suppliers and negotiate contracts

- Ensure an effective inventory process

- Develop and prepare seasonal menus suitable to every occasion, balancing creativity and guest requests while ensuring leading edge presentation and food quality

- Document and measure Key Performance Indicators in alignment with Vetta's objectives and goals

- Develop and manage budgets

- Active involvement in the development and implementation of kitchen & restaurant capital projects

- Optimize the profitability levels through consistent monitoring of inventory levels, food cost controls and staffing levels and productivity targets with the goal of ensuring a balance between service and profitability

- Solve staff and customer complaints efficiently

- Maintain food and beverage standards through the use of standardized food recipes and safe food handling practices;

People

- Provide leadership, direction, and oversight for the back of house

- Coach and mentor other leads within the department

- Prepare schedules, ensuring productivity levels are maximized through the effective utilization of all colleagues and providing hands on support as required

- Approve timesheets and address all payroll concerns

- Responsible for maintaining staffing levels through proactive recruiting & talent development within the team

- Ensure that performance management and colleague training/development occurs in a timely and consistent manger;

- Participate in the resort operational and leadership meetings, including the Banquet Event review;

- Oversee the menu creation of our staff restaurant to ensure the highest quality of product for our internal customers;

- Personally, respond to food-related feedback and ensure proper processes and reports are produced

- Build relationships with all vendors to ensure that Vetta is receiving the best cost and quality for all outlets.

- All other duties as required

WHAT WILL MAKE YOU SUCCESSFUL

- Culinary Certification?

- Minimum 5 years previous food and beverage experience

- Minimum of 2 years experience as an Executive Chef in a resort setting

- Hospitality or Restaurant Management Diploma or equivalent an asset

- Restaurant opening experience is preferred

- Strong knowledge of Microsoft Office and Internet

- Smart Serve and Food Handling certificate required

- Knowledge of ResortSuite is an asset

- First Aid Certificate/ CPR an asset

- Exceptional communication and relationship skills to motivate and engage employees

- A growth mindset and good understanding of business management and budget planning to recommend and implement system improvements

- Strong organizational skills with the flexibility to adjust to evolving work assignments in a fast paced, entrepreneurial environment

- Excellent customer service and problem-solving skills

- Ability to read & interpret business records & statistical reports; interpret financial information & prepare budgets.

- Make business decisions based on production reports, facts, and personal experience.

- Interact with the general community, guests, employees and government officials with tact and courtesy.

YOUR WORKING CONDITIONS

- Able to work in a fast-paced environment

- Comfortable walking and standing over an 8-hour period of time

- Work in an environment with minimal temperature control

- Able to lift max of 50 lbs.
