Job Title: Head Chef Seeking experienced Head Chef with banquet experience to lead and execute catering for an exciting new hot lunch program for Lyc\xc3\xa9e International de Calgary, a private school in Calgary, with expected enrolment of 150 students, plus additional meals for staff. For immediate hire, to begin on or around August 15, 2024, with contract extending to July 1, 2025 Full-time, salaried position. Seasonal with possibility of Year-Round with the inclusion of cooking for camps. Expected hours will decrease during school breaks, unless cooking for camps. School breaks occur after every trimester and over the Christmas holiday. Wage starting at $25/hr, with ability to increase over time proportionate to job performance and loyalty. Must be able to do and have the following:
Execute large batch recipes of varying portion size.
Accurately figure food costing.
Track and order inventory
Create new recipes with exact measurements.
Work with and lead a team, but also work strongly independently.
Provide coaching, mentorship, and leadership to all cooks within the kitchen assisting with work, training, and development.
Accurate reporting of personal hours, kitchen rental hours, as well as team member\xe2\x80\x99s hours.
Ensure that the kitchen area and equipment are always maintained at the highest level of cleanliness.
Ensure all food products are stored in appropriate containers, labeled, and rotated, to minimize waste, maximize quality, and ensure freshness.
Will be receiving orders and product. May be required to pick up ingredients from time to time from individual retailers.
Ensure the highest level of hygiene and food safety is adhered to by all employees in the preparation and handling of food items.
Must record accurate food temperatures and will be responsible for sending out food at appropriate times and temperatures
Basic Essentials of the Job:
Valid Food Safe Certification.
Ability to stand for extended periods of time and lift 50lbs.
2+ years\xe2\x80\x99 experience in a similar position is required.
Strong English communication skills with ability to establish and develop relationships with employees, partners, vendors, and customers.
Will not necessarily be required to be at service in the school, but an interest in or knowledge of working with kids is a plus
Will be working directly with owner of the company and outside professional consultation to build and execute this program for the inaugural year. Expectation is that his position will be one for an individual looking for a professional home and preference will be given to someone who is willing to commit to the position for more than one year. Bonuses and raises will be given based on loyalty and longevity. Only considering candidates willing to stay in position for 1-5 years. Benefits will be considered to be offered after the first contract year. Excellent job for a previous executive chef burned out by long and late hours in the hospitality industry. Hours TBD, but will be mostly during the day and through the week (M-F). Weekends may occasionally be needed in the event prep needs to be completed following a school break. All meals must leave the kitchen to be picked up by courier at 10:30am. Prep for the following day and clean-up will be after service, which is on-site at the school from 11:00-1:00.
