Position Summary
A General Cook is responsible for preparing and cooking various food items according to recipes and airline menu specifications. He/she must follow consistently all the food safety and HACCP principles in line with Gate Gourmet Food Safety policies and procedures.
Essential Duties and Responsibilities:

Responsible for timely, proper, and efficient preparation of all food items according to the correct menu specifications, recipes, and passenger load requirements. Ensure the proper use of raw materials in a continuous effort to keep wastage to a minimum. Comply with and practice the company's established Food Safety/ HACCP Policy and Procedures. Assuring that the quality standards of the food is maintained all the time Co-ordinate with Assembly/Food Packing staff to make sure their work is not delayed, and all dished meals are in accordance with the airline specs Responsible for managing inventory, ensure FIFO is being followed Should have basic knowledge, experience, and skills to work with various modern kitchen equipment - Rational Oven, Fryer, Steam Kettles, Char Broiler, Flat top Stove, Cooking Gas range etc.
Job Specific Requirements:At least 1-year experience cooking in a hotel kitchen/restaurant or manufacturing high volume catering environment Experience cooking in various cuisines - Asian/Indian/Continental/ is an asset Must be able to read, write and follow food specifications and menu guidelines in English

Education Requirements

Culinary degree or cooking certification preferred

Environmental Requirements:Will be exposed to extreme temperature changes and noise Must be able to lift, push, pull, move product, equipment and supplies up to fifty (50) pounds Regularly stands, bends, lifts and moves intermittently during shifts of 8 hours

Un cuisinier general est responsable de la preparation et de la cuisson de divers aliments selon les recettes et les specifications du menu des compagnies aeriennes. Il/elle doit respecter de maniere constante tous les principes de salubrite alimentaire et HACCP, conformement aux politiques et procedures de gategourmet en matiere de salubrite alimentaire.



Taches et responsabilites essentielles :

Responsable de la preparation ponctuelle, correcte et efficace de tous les plats conformement aux specifications du menu, aux recettes et aux exigences liees au nombre de passagers. Veiller a l'utilisation appropriee des matieres premieres afin de reduire le gaspillage au minimum. Respecter et appliquer la politique et les procedures etablies par l'entreprise en matiere de salubrite alimentaire / HACCP. Garantir en permanence le maintien des normes de qualite des aliments. Coordonner avec le personnel d'assemblage/emballage des repas afin d'eviter tout retard et s'assurer que tous les plats servis sont conformes aux specifications de la compagnie aerienne. Responsable de la gestion des stocks et du respect de la methode FIFO (premier entre, premier sorti). Posseder des connaissances de base, de l'experience et des competences pour utiliser divers equipements modernes de cuisine : four Rational, friteuse, marmites a vapeur, grill a braise, plaque de cuisson, cuisiniere a gaz, etc.




Exigences specifiques au poste :

Minimum d'un an d'experience en cuisine dans un hotel, un restaurant ou dans un environnement de restauration collective a grand volume. Experience dans la preparation de differentes cuisines (asiatique, indienne, continentale) constitue un atout. Doit lire, ecrire et suivre les specifications alimentaires et les directives de menus en anglais.

Exigences en matiere de formation

Diplome en arts culinaires ou certification en cuisine souhaite Le certificat ''Red Seal'' constitue un atout important

Exigences environnementales :

Sera expose a des variations extremes de temperature (Congelateur - Four) et au bruit Doit etre capable de soulever, pousser, tirer, deplacer des produits, equipements et fournitures jusqu'a 23 kg (50 livres) Etre debout regulierement, et de facon intermittente se penche, souleve et bouge pendant des quarts de travail de 8 heures
