WHAT'S THE JOB?
Based in a world class Horizon North camp facility, the regular shift for this position is 21 days on and 21 days off, with 12 hour workdays. Transportation is provided to site by flight from any major flight hubs.

The First Cook is responsible for preparing and cooking all main meals as per requirements; and ensuring all meals are prepared and served on time to the highest standards of Horizon North.

This position is safety sensitive and requires drug, alcohol and fit to work testing as a condition of employment.

Your work will include:

  • Management of meal preparation, assistance with inventory management, menu planning, and ordering.
  • Demonstrate mastery of all aspects of cooking (i.e., proteins, sauces, starches, vegetables, etc.) for all meal types
  • Accommodate various diets including vegetarian, vegan, cultural, food allergies, and other specific requests
  • Able to safely use, clean, and maintain all kitchen equipment (i.e., flattop, grill, fryer, meat slicer etc.)
  • Demonstrate and ensure the use of proper knife skills
  • Responsible for ensuring food quality, food safety (including reporting all food allergies), and food standards are met
  • Supervise, manage, train, mentor, and direct other kitchen staff (as required) Ensure all daily and weekly cleaning tasks are completed
  • Ensure food quality, food safety, and food standards are met
  • Adhere to all safety policies and procedures as per task, equipment usage, or PPE requirements
  • Complete health and safety required documents, including temperature charts
  • Participate in Toolbox meetings, complete Field Level Risk Assessment, and Hazard Identifications daily.
  • All other duties as assigned.

Qualifications

WHO ARE WE LOOKING FOR?
  • Minimum 3 years' experience in the hospitality / food service industry
  • Minimum 1 year prior experience as a Sous Chef in hotels, resorts, restaurants and/or camps, with the cooking competency and knowledge of international and domestic cuisines
  • Must have an excellent practical and theoretical background in all areas of the kitchen i.e: Hot Kitchens, Cold Kitchens, Pastry / Bakery, Butchery and Banquets dealing with large numbers of guests;
  • Must possess valid advanced food safe designation
  • Preferred Red Seal Designation
  • Knowledge of Computer programs (Microsoft Excel, Microsoft Word, Sysco, Outlook)
  • Successful candidate MUST obtain a 80% make or higher on the mandatory WHMIS test (Workplace Hazardous Materials Information System)
