We are hiring Full-Time Permanent Food Production worker to support our food production team.
Working Hours: 10:00PM till 06:30AM (Monday - Friday) 8hrs x 1 Position
Expected Date of Joining: ASAP
This combined role focuses primarily on Wagon Master responsibilities, ensuring smooth flow of products between the smokehouse, coolers, and RTE lines while maintaining accuracy, organization, and food safety.
The secondary responsibility includes supporting Smokehouse Tender tasks as needed, such as documentation, loading/unloading, and smokehouse operations
Responsibilities:
Primary Role: Wagonmaster
Product Flow and Coordination
Stage product cages to the RTE line at the start of each shift.
Remove finished product from smokehouses and transfer to blast coolers.
Manage product movement between smokehouse, coolers, and RTE areas to maintain smooth production flow.
Apply FIFO principles when staging product for packaging.
Organize and store product by species, allergens, product type, and production date.
Maintain proper spacing and layout to prevent cross contamination.
Monitoring and Quality Control
Monitor and record product temperatures during unloading, cooling, and storage.
Complete hourly temperature checks in blast coolers until safe cooling levels are achieved.
Conduct visual quality checks including texture, color, and product condition.
Check trailer temperatures every two hours and report deviations.

Documentation and Traceability
Accurately record product details including name, weight, temperature, time, and location.
Verify HACCP tags and supporting documentation for accuracy and completeness.
Track product storage dates and movement to ensure full traceability.
Complete all required records clearly, accurately, and in a timely manner.
Sanitation and Compliance
Maintain cleanliness of coolers through daily cleaning and scheduled deep cleans.
Handle cleaning chemicals safely using required PPE.
Coordinate with HACCP and Sanitation teams for pre-operational checks.
Follow all food safety, quality, and hygiene requirements at all times.
Secondary Role: Smokehouse Support
Product Handling and Smokehouse Operations
Identify and verify products received from stuffing lines prior to smoking.
Weigh products and record tare and net weights before smokehouse loading.
Load and unload smokehouses following approved safety and operational procedures.
Operate smokehouses, generators, and CIP systems as required.
Quality Monitoring and Records
Monitor product temperature and color during smoking processes.
Ensure smoke sheets are completed accurately including formulation date, batch number, smoke date, and time.
Maintain consistent and legible quality and production records for review and inspection.
Cleaning, Maintenance, and Support
Clean smokehouse generators and staging areas according to maintenance schedules.
Complete daily, weekly, and monthly smokehouse tasks to support operational readiness.
Support RTE areas with product handling when required to maintain workflow.
Report equipment issues, defects, or abnormalities promptly to the Smokehouse Supervisor.
Follow all Smokehouse SOPs and internal procedures.
Requirements
High school diploma or equivalent.
Experience in food production, cooler operations, or smokehouse processing is an asset.
Basic knowledge of smokehouse operation, maintenance, and product handling.
Strong attention to detail and ability to follow detailed procedures.
Strong organizational skills and ability to manage multiple tasks.
Knowledge of food safety, HACCP, and FIFO principles.
Able to work in cooler/smokehouse environments and lift up to 50 lbs.
Attention to detail and accurate record-keeping skills.
Able to work independently or as part of a team.
