Position Summary

Canada\'s first Gordon Ramsay Burger at Hard Rock Casino Vancouver will be opening it\'s doors later this year and we\'re currently on the lookout for our next Executive Sous Chef, Gordon Ramsay Burger. Our Executive Sous Chef Gordon Ramsay Burger will be responsible for assisting the Executive Chef in the overall management and profitability of our Gordon Ramsay Burger Culinary operation, while also developing performance objectives and delivering performance evaluations to the Culinary team. Our Executive Sous Chef, Gordon Ramsay Burger will promote and take initiative in the continual quest for culinary excellence while upholding service priorities including safety, cleanliness, quality, and speed. Key Accountabilities

  • Providing leadership, direction and mentoring to the Gordon Ramsay Burger Culinary operation
  • Assisting in planning, directing and implementing food preparation, purchasing and presentation policies and procedures
  • Assisting in training Culinary team members in new culinary techniques through formal training sessions and/ or monthly meetings
  • Participating in trade shows or culinary events when requested
  • Assisting with the implementation of new programs and projects in conjunction with the Executive Chef
  • Maintaining food and labour costs as per budgetary guidelines and making suggestions to improve profitability
  • Compiling food product requirements from the Sous Chefs in order to submit purchase orders in a timely manner
  • Signing off on higher level POs, shipments and invoices
  • Offering culinary expertise to internal and external guests
  • Liaising and communicating effectively with all appropriate operational departments
  • Developing and cultivating strong working relationships with all stakeholders (guests, ownership and team members)
  • Interviewing, hiring and training and developing kitchen team members in all areas of food operations; planning, assigning, and directing work; managing performance
  • Rewarding and providing feedback to team members; addressing complaints and resolving problems
  • Ensuring the ongoing practice of safe food handling and preparation techniques
  • Ensuring compliance with licensing laws, health and safety and other statutory regulations
  • Working closely with the Executive Chef and General Manager to maintain the success of the Gordon Ramsay Burger operation
  • Performing other duties as assigned or directed
Education and Qualifications

  • A commitment to continually increase your knowledge of our products and services in order to offer exceptional experiences to our guests
  • Understanding of yourself and others when communicating with team members and guests
  • A passion for providing Great Experiences and Memories to our internal and external guests in the continual quest of achieving service excellence

  • Minimum 3 years\' experience in Culinary management
  • Knowledge of Optimum Control an asset
  • Previous experience in opening and working in a fast-paced premium casual restaurant an asset
  • Demonstrated ability to lead by example
  • Culinary education and previous hotel experience an asset
  • Red Seal certification an asset
  • High school diploma required
  • Level 1 and Level 2 Food Safe certification
  • Ability to successfully obtain a Serving It Right Certificate
  • The ability to successfully obtain a Criminal Record Check
  • Working knowledge of MS Office
  • Experience managing in a unionized environment an asset
Work Environment Considerations
  • Regular kitchen environment, standing and walking for long periods of time and non traditional working hours.
