Position Summary

Under the supervision of the Chef, the incumbent is responsible for volume food preparation for Victoria University Food Services. This involves: preparing, cooking, decorating, displaying, assisting Chef provide service to students, community and guests of Victoria University.



Qualifications Required:



Education

Certification from an accredited culinary training program, or equivalent combination of education and experience.



Experience

A minimum of three years of volume food production experience in a large institutional or commercial establishment.



Other

Excellent customer service skills. Ability to maintain co-operative working relationships with staff and customers. Ability to communicate effectively in English (oral and written). Physical ability to perform duties described and to use indicated equipment. Has knowledge of current Food Service industry trends. Food Handler Certification and WHMIS training required.



Duties:

Food production for dining hall and Ned's Cafe

Read menu for the day to determine what and how much to prepare, following approved standardized recipes Under the direction of the Chef, cook food for dining hall and Ned's Cafe, with a focus on food quality Anticipate needs for meal by interpreting past records and considering current conditions, to ensure availability of items without creating waste Communicate with Chef regarding use of leftover food Enter meal count into log book at the end of the meal to maintain accurate records of attendance Prepare "grab 'n go items" for Ned's Cafe Preparation for upcoming meals Read menu for following meal/day to determine what needs to be prepped Prep duties involve cleaning and chopping vegetables, taking food out of the freezer, marinating meats

Food production during meals

Cook food on a per order basis; this includes any foods which need to be cooked immediately before sending up to the servery Communicate with the lead hand/supervisors and servers in order to anticipate needs for the meal Send food up to the servery or to Ned's Cafe, as requested; this includes any foods which may be cooked in advance and kept warmed until needed Be prepared with a backup plan in case any food items run out At end of dinner, cover leftover food and store as appropriate

Food production for functions

Read function sheet to determine what, how much, and when to prepare food Cook all necessary function food, with a focus on food quality Function food includes prepared frozen foods, steam table food, and food to order Assist with functions, where an experienced meat carver is needed, or to supervise the appearance of served meals

Other duties

Inform Chef of dwindling or out of stock supplies, or any broken or malfunctioning equipment. Ensure equipment and appliances are cleaned as they are used and sanitized according to WHMIS legislation and Health and Safety Codes Ensure equipment is cleaned as it is used, this includes taking soiled utensils and cooking wares to the dish room as necessary
