Job Description

Position: The Cook acts as Supervisor/Kitchen Manager on duty in regards to the timely preparation and presentation of food to our residents on a daily basis. The Cook provides direction and oversight to Dietary Aides and Cook?s Helper, ensuring timely preparation and delivery of meals and maintaining a clean and organized department. The Cook is responsible for ensuring all food preparation and food safety procedures are followed as directed and in accordance with Chancellor Park standards and recipes. Daily activities are performed according to written or oral instructions/recipes. Food must be of superior quality, and prepared in a timely manner. Hours of Work: Chancellor Park Dietary department currently operates on 10 hour shifts. Schedule to be determined based on operational requirements, weekends and holidays required. Job Duties:
  • Prepare meals/foods as per recipes (from raw state or scratch) and production standards ensuring that food is ready as per specified timelines.
  • Prepare modified or special diet items per special requests, recipes, and/or catering daily event sheets.
  • Prepare all foods in an appetizing manner, in both taste and presentation with appropriate garnishes and condiments.
  • Continuously ensure stations and food service areas are properly merchandised, and clean as per the guidelines for health and safety, food safety, and cleanliness. This may include completing some light housekeeping duties.
  • Ensure that proper procedures are followed for food preparation in regards to time, temperature as well as health and safety control systems, this may include completing temperature checks/logs and core sampling.
  • Adhere to all recipes, specifications, portioning standards, catering standards, or other guidelines.
  • Provide efficient service while maintaining excellent customer relations.
Required Skills & Experience:
  • The successful candidate must be a Red Seal Cook as per the interprovincial Red Seal program; consideration may be given to candidates who have completed another recognized culinary program, but have not yet achieved the Red Seal designation, provided they meet the experience requirement as well.
  • Minimum 5 years previous experience in a similar position, leading a kitchen
  • Basic FST, ServeSafe Certified is preferred; GHS/WHMIS, and first aid certification required (if not currently certified, must be able and willing to complete training).
  • Thorough knowledge of all cooking practices and understands conversions.
  • Must be able to work in a high-stress, fast paced environment.
  • Must be able to effectively speak, read, and write English.
  • Must have excellent communication and customer service skills.
  • Must be able to maintain reliable attendance, and work flexible hours/shifts as required.
  • Capable of working in an environment where noise levels can be high at times and temperatures can fluctuate.
