Role Description
As Cook at this nationally recognized restaurant, you'll work closely with our Executive and Sous Chefs to execute an elevated, ever-evolving menu rooted in Japanese techniques and seasonal Canadian ingredients. You'll help drive excellence in every service while developing your skills under the guidance of our culinary leadership team.
Set up and stock stations with all necessary supplies and mise en place
Oversee cleanliness and organization of stations and equipment to fine dining standards
Execute advanced prep techniques: butchery, fish breakdown, sauce work, and specialty preparations
Handle and prepare wide range of raw fish, poultry, and proteins with precision and Japanese technique mastery
Support equipment maintenance and uphold rigorous food safety standards
Culinary Execution & Standards
Perform fine vegetable work including brunoise, julienne, and precise knife cuts
Execute proper filleting of fish and breakdown of proteins to exact specifications
Ensure food is consistently prepared in accordance with Shokunin's exacting quality standards
Maintain speed and precision during peak service times
Support kitchen culture of continuous improvement and learning
Team Collaboration & Development
Receive instruction from Sous Chefs and Executive Chef with professionalism
Participate in team meetings, tastings, and training sessions
Collaborate with kitchen team to ensure seamless service operations
Contribute to positive kitchen culture focused on culinary excellence
Perform additional duties as assigned and consistent with fine dining operations
Quality & Innovation
Uphold Shokunin's reputation for quality, efficiency, and innovation
Ensure all dishes meet our nationally recognized standards
Maintain consistency in presentation and flavor profiles across all preparations
Support seasonal menu development and special event preparations
What You Bring
Minimum 1-3 years of kitchen experience
in high-end, fine dining, or fast-paced culinary environments
Intermediate knife skills
with ability to perform fine vegetable work including brunoise, julienne, and precise cuts
Experience with fish filleting
and proper breakdown of proteins
Availability to work until midnight
and during peak service periods
Knowledge of Japanese cuisine and techniques -- or strong willingness to learn deeply
Fierce commitment to speed, precision, and cleanliness in all kitchen operations
Ability to work effectively under pressure during high-volume service
Strong work ethic and dedication to continuous learning
Availability for days, late nights, weekends, and public holidays
Culinary program certification is an asset but not required
