Job Description

Position summary:



The Banquet Chef works closely with the Regional Culinary Operations Lead, Owners and local Food and Beverage leaders to create and provide exceptional experiences for our guests. They help to create and develop new dishes and menus, produce high-quality dishes in keeping with our high standards, manage stock of ingredients, and place orders with vendors. Banquet Chefs act as mentors and trainers to up-and-coming young chefs, developing their skill sets and talent, also train and supervise the auxiliary kitchen staff to ensure productivity in the kitchen.

Duties and responsibilities



Direct and control the culinary operations of banquet facilities at an excellent level while maintaining and abiding by all standards, policies, and procedures set forth by our company, applicable government agencies and foreign worker programs.

Create costed schedules including providing updated weekly labour costs for the back-of-house banquet team.

Assist with receiving and preparing only the freshest quality ingredients, to ensure we offer our guests our best product possible.

Work with a team to develop, maintain and follow best practices for food storage and use, ensuring the high standards of quality expected by our owners.

Help maintain high standards of cleanliness and sanitation in all kitchen areas.

Learn and practice our food preparation and dish presentations.

Assist with the preparation and execution of group functions on- and off-site.

Promote team spirit between staff in different departments, enhancing our positive work culture.

Act as a coach to provide ongoing opportunities for your crew to build their skills.

Perform any other reasonable request as assigned by the Owners.

The ideal candidate:



Has at least 3 years of experience preparing and executing banquets for small and large groups. Has strong interpersonal skills that allow them to work effectively in a diverse environment. Dedicated to providing personalized and professional service to all guests, and to showcasing the local region. Able to withstand extended periods of standing, and other physically demanding conditions. Able to operate in high pressure environment and remain calm and focused in urgent situations. Able to work flexible hours, including evenings, weekends, and holidays, as well as overtime from time to time. Able to read, write and communicate in an English working environment. Able to manage time efficiently. Holds a valid FOODSAFE or Food Safety certification. Holds or is willing to work towards holding a First Aid, Level 1 certification.
