Bakery Food Production Controller

Job Description

The Paleo Palate Cafe is a rapidly growing CPG company that makes the most amazing glutenfree desserts using mindful ingredients. We are looking for a enthusiastic, smart & talented bakery production controller to assist & manage our day to day operations. Candidates with knowledge and experience of glutenfree baking and alternative dietary lifestyles like paleo, keto, vegan will be given a strong preference. The bakery production controller will be required to but not limited to do the following: Production Planning and Schedule Management:

  • Measure and mix ingredients according to recipes.
  • Check production schedule to determine variety and quantity of goods to bake.
  • Do a constant visual inspection and monitor production progress, identify bottlenecks, and implement corrective actions to maintain smooth operations.
  • Use a variety of kitchen tools, like stand mixers, food processors, weighing scales etc
  • Coordinate production activities, including ingredient preparation, baking, and packaging, to ensure timely and accurate execution.
Cleaning and Sanitation:
  • Strive towards maintaining a very clean production environment always and at all times
  • Develop and enforce cleaning protocols to ensure the facility and equipment are cleaned and sanitized according to regulatory standards.
  • Adhere to the cleaning schedule and ensure all cleaning tasks are completed in a timely manner.
  • Train and educate production staff on proper cleaning procedures and enforce hygiene practices throughout the facility.
  • Execute thorough cleaning and sanitization of all bakery equipment, work surfaces, and utensils to meet hygiene standards and prevent cross-contamination.
  • Properly handle and store cleaning agents and chemicals, following safety guidelines.
Hazard Control and Safety Compliance:
  • Implement and maintain hazard control measures to minimize risks and ensure a safe working environment.
  • Follow HACCP (Hazard Analysis and Critical Control Points) and GMP (Good Manufacturing Practices) guidelines to ensure food safety and quality standards are met.
  • Conduct regular inspections to identify potential hazards, and take prompt corrective actions to mitigate risks.
Staff Supervision and Training:
  • Assist leadership by suggesting improvements in production process, customer management, hiring and performance management.
  • Foster a positive and collaborative work environment, promoting teamwork, efficiency, and continuous improvement.
