RESPONSIBILITIES

Prepares a variety of foods to meet the needs of various food outlets and banquets using skills learnt through Red Seal Certification, and methods.

DUTIES

Leadership



Leads the work of the Kitchen Staff, providing training and leadership, monitoring performance and providing assistance to team.

Participates in the training of apprentices, directing their activities, monitoring their performance and reporting findings to the Executive Chef.

Verifies that scheduled staff has reported for work and are suitably attired.

Plans and distributes work assignments to minimize labour costs.

Ensures white coat service is delivered during the P.M. shift

Food Preparation Checks menus and banquet orders ensuring ingredients and supplies are available.

Prepares soups, sauces and specials according to the recipe specifications.

Prepares mise en place for dinner service.

Prepares meats, poultry, and fish by roasting, frying, and broiling.

Creates attractive garnishings for plate service ensuring daily variety.

Prepares menu items for the dining room ensuring that food meets the Hotel standards of quality, quantity, taste and presentation.

Organizes an assigned refrigerator and prevents spoilage of food, ensuring it is covered and labeled and used in rotation.

Controls food costs by using up leftover foods.

Communicates with the dinning room supervisor regarding reservations to assess daily production needs.

Food Storage

All in-service or prepped food to be labeled, dated and stored appropriately

Food stocks to be rotated 1st in 1st out

Storage areas are routinely cleaned

Food to be stored at the proper temperatures

Refrigerated storage temp is between 32F and 40F (0C and 4C).

Frozen items are in freezers with temps below 0F (-18C).

Other

Complies with Hotel policies and procedures.

Performs other tasks as assigned by Management.

Actively participates in quality Teams as assigned.

Actively participates in all assigned training programs.

Assists other team members in own, or other department, as required.

Conduct white coat service on the PM shift

Accommodate all reasonable guest request

Deliver all special meals requested by guest

Safety & Wellness

Works in compliance with company Safety & Wellness policies and procedures.

Complies with the Occupational Health & Safety Act and regulations, as they apply to the workplace.

Uses or wears personal protective equipment or clothing as required by the employer.

Reports any accident/incident to the supervisor.

Reports any unsafe or hazardous condition/practice to the supervisor.

Maintains work area in a clean, orderly manner.

Never operates any equipment, machine, device or work process in a manner that will endanger yourself, another worker, or a guest.

Pay: From $30.07 per hour
